Recipe - Spanish Chicken

A quick delicious Chicken dish that takes minutes to prepare.


  • 4 chicken fillets
  • 3 onions, thinly sliced
  • 1tbsp olive oil
  • 2 tablespoon paprika
  • zest and juice of 1 lemon
  • good handful of parsley, roughly chopped
  • 150ml stock


Heat oven to 190°C / 170°C fan / gas 5.  Put all the ingredients into a large, wide ovenproof dish.  Mix everything together with your hands and season.

Bake for 45 mins, stirring the onions after 20mins, until the chicken is golden and the onions tender.  Serve with rice.
