Large fresh roasting chicken, locally produced and slowly grown so as to ensure a moist flavoursome roast.

Remove all packaging and place in a oven proof dish with about a centimetre of water in it, cover with tinfoil and roast for 1hr 30 minutes at 180 celsius in a preheated oven, remove tinfoil and drain juice. Place the chicken back into the oven for 10 minutes to allow it to brown, the juice you have drained off it will make the base for a delicious gravy.
